Why does quick bread fall?
Quick breads fall for a few reasons:
* Too much leavening agent: If you use too much baking powder or baking soda, the bread will rise too quickly and then collapse.
* Not enough liquid: If there isn't enough liquid in the batter, the bread won't be able to rise properly and will fall.
* Too much sugar: Sugar can interfere with the leavening process, causing the bread to fall.
* Not enough gluten: Gluten is a protein that helps to hold bread together. If there isn't enough gluten in the batter, the bread will be weak and will fall.
* Over-mixing the batter: Over-mixing the batter can damage the gluten and cause the bread to fall.
* Not greasing the pan properly: If the pan is not greased properly, the bread will stick to the pan and will fall when you try to remove it.
* Opening the oven too soon: If you open the oven too soon, the bread will fall because it is still not fully baked.
