Biddock Pie
Ingredients:
- 2 packages active dry yeast
- 1 cup warm water
- 3/4 teaspoon salt
- 2 tablespoons sugar
- 3 tablespoons vegetable oil
- 3 1/2 cups all-purpose flour, plus more for dusting
- 2 pounds ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 cup shredded cabbage
- 1 (10-ounce) can diced tomatoes with green chilies, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
Instructions:
1. In the bowl of a stand mixer fitted with the dough hook, combine the yeast, warm water, salt, sugar, and vegetable oil. Let sit for 5 minutes.
2. Add the flour, one cup at a time, until the dough comes together and forms a ball. Turn the dough out onto a floured surface and knead for 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour.
3. While the dough is rising, preheat the oven to 375 degrees F (190 degrees C).
4. In a large skillet, brown the ground beef over medium heat. Drain any excess fat. Add the onion, green bell pepper, and cabbage and cook for 5 minutes, until the vegetables are softened. Stir in the diced tomatoes, chili powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened.
5. Punch down the dough and divide it in half. Roll out each half into a 12-inch circle. Place one circle of dough on a greased baking sheet. Spread the ground beef mixture over the dough, leaving a 1-inch border. Brush the edges of the dough with the beaten egg.
6. Fold the edges of the dough up over the filling and crimp to seal. Brush the top of the dough with the beaten egg.
7. Bake in the preheated oven for 25 minutes, or until the crust is golden brown and the filling is hot and bubbly. Let cool for 10 minutes before slicing and serving.
