Ingredients:
* 1 pound orzo pasta
* 1/2 pound white mushrooms, sliced
* 1/2 cup frozen peas, thawed
* 1/2 cup chopped fresh parsley
* 1/4 cup chopped fresh mint
* 1/4 cup olive oil
* 2 tablespoons white wine vinegar
* 1 tablespoon Dijon mustard
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup grated Parmesan cheese
Instructions:
1. Cook the orzo according to the package directions. Drain and rinse with cold water. Set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they are softened and browned, about 5 minutes.
3. Add the peas and cook for an additional 1-2 minutes.
4. Stir in the parsley, mint, olive oil, white wine vinegar, Dijon mustard, salt, and black pepper.
5. Add the cooked orzo and toss to combine.
6. Transfer the salad to a serving bowl and top with the Parmesan cheese.
7. Serve immediately.
