Baked Green Bean Fries

Baked green bean fries are a healthy alternative to traditional french fries and a tasty way to shake up green beans. You only need a few ingredients to make this tasty side, and minimal effort. The same methods can be expanded upon to use with carrot, asparagus or sweet potato fries. Try pairing baked green bean fries with an aioli sauce, a spicy, mayolike dip made with garlic.

Breading

  • The key to baked green bean fries, or any vegetable fries, is in the breading. You'll want to dredge the green beans in flour, then beaten eggs and, finally, in a breading mixture. Dredging essentially means to dip the green beans, but make sure the beans are fully coated in the substance into which you're dipping them. For a breading, use 1 part Parmesan cheese to 2 parts panko breadcrumbs -- a Japanese breadcrumb that won't overwhelm the green beans -- and season the breading with salt and pepper.

Seasonings & Variations

  • Salt and pepper are the most basic of seasonings, so switch things up when you make baked green bean fries.

    • Try using garlic salt or a seasoning salt for an easy twist, or add in a dash of paprika or chili powder for a zing.
    • Seasoning mixes can also add some pop.
    • Try subtle flavorings by mixing fresh rosemary or thyme with the breadcrumbs.
    • Squirt a bit of fresh lemon juice over the top of the baked green bean fries.
    • Finally, if you prefer, mix up the breading by utilizing traditional breadcrumbs, or cornmeal.

Cooking Methods

  • You'll want to use a nonstick pan when baking the green bean fries so, for easy cleanup, use a layer of parchment paper on a baking sheet. The green bean fries should be baked for about 10 minutes at 420 degrees Fahrenheit. Keep an eye out while baking as ovens tend to vary and your green bean fries may need a few minutes more or less. You do not need to flip or turn the green bean fries as they bake. The breading should be a crispy, golden brown to signify that it's done.

Safe Handling and Storage

  • Always wash green beans before making dishes with them, to remove as much residual dirt and pesticides as possible. By relying on organic green beans you minimize the pesticides but you should still wash the green beans to be safe. You can refrigerate leftover green bean fries for a day or 2, though they will taste best fresh. Heat up the leftover baked green beans on a baking sheet at 325 F for 3 to 5 minutes for less than 4 servings of green bean fries -- about 20 to 25 fries -- and up to 10 minutes for larger amounts.
