Baked Broccoli & Carrots
Baked vegetables are an easy and healthy side dish. Carrots and broccoli tossed in oil and baked in the oven have more flavor than steamed vegetables, but are still a healthier side dish than pan-fried vegetables. Oven roasted vegetables are also a simple side dish because they require very little attention, so you can focus on cooking your main course while the side dish cooks in the oven.
Things You'll Need
- Carrots
- Broccoli
- Large Bowl
- Baking Sheet
- Slotted Spoon
Instructions

Preheat the oven to 375 degrees. Wash your broccoli and carrots. Cut broccoli into smaller florets. Peel carrots using a vegetable peeler. Cut into 1/4-inch coins. Place in a bowl.

Add 1 tbsp. of olive oil to the bowl, then add in salt, pepper and any other spices you desire. Use a large slotted spoon to toss the vegetables in the oil. Scoop out of the bowl and onto a cookie sheet or rectangular baking pan.

Place the pan in the oven. Bake vegetables for 12 to 15 minutes, or until softened. Toss once throughout the baking process, if necessary.

Serve the vegetables as a side dish with any main course. Add any additional salt and pepper.
