Hot and Sour Soup

Ingredients:

- 1 cup thinly sliced pork

- 1/4 cup diced bamboo shoots

- 1/4 cup diced water chestnuts

- 1/4 cup diced carrots

- 1/4 cup diced mushrooms

- 4 cups chicken broth

- 1/4 cup soy sauce

- 1 tablespoon rice vinegar

- 1 teaspoon sesame oil

- 1 teaspoon white pepper

- 2 tablespoons cornstarch

- 2 tablespoons cold water

- 1 egg, beaten

- 2 tablespoons chopped green onions

- 1 tablespoon chopped cilantro

Instructions:

1. In a large pot or Dutch oven, bring the chicken broth to a boil.

2. Add the pork, bamboo shoots, water chestnuts, carrots, and mushrooms and cook for 5 minutes.

3. Reduce heat to low and add the soy sauce, rice vinegar, sesame oil, and white pepper. Simmer for 10 minutes.

4. In a small bowl, whisk together the cornstarch and cold water until smooth.

5. Slowly whisk the cornstarch mixture into the soup and cook for 5 minutes, or until the soup has thickened.

6. Remove the soup from the heat and stir in the beaten egg.

7. Top with green onions and cilantro. Serve immediately.
