Granny's Soup Recipe:
Serves 4
Ingredients:
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/4 cup chopped fresh parsley
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can corn, drained
- 1 (10-ounce) can diced tomatoes with green chilies, undrained
- 1 (14-ounce) can low-sodium chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup shredded cheddar cheese
- 1/4 cup sour cream
- Tortilla chips, for serving
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, celery, carrots, and parsley and cook until the vegetables are softened, about 5 minutes.
3. Add the black beans, corn, tomatoes, chicken broth, salt, and pepper and bring to a boil.
4. Reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
5. Ladle the soup into bowls and top with cheese, sour cream, and tortilla chips.
6. Enjoy!
