Here's a recipe to make pea soup:
Ingredients:
- 1/4 cup (56 grams) dried split peas, rinsed and sorted
- 4 cups (960 milliliters) chicken or vegetable broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons (30 milliliters) olive oil
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- 1 cup (about 10 ounces/280 grams) frozen peas
Instructions:
1. In a large pot or Dutch oven over medium heat, heat the olive oil.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the garlic, thyme, salt, and pepper and cook for 1 minute more.
4. Add the broth, split peas, carrots, and celery. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes, or until the split peas are tender.
5. Add the frozen peas and cook for an additional 5 minutes, or until the peas are heated through.
6. Taste and adjust the seasoning if needed.
