Chicken & Avocado Salad

Ingredients:

- 1/2 cup cooked chicken, shredded

- 1/2 avocado, sliced

- 1/4 cup chopped celery

- 1/4 cup chopped red onion

- 1/4 cup chopped cilantro

- 1 tablespoon olive oil

- 1 tablespoon lime juice

- Salt and pepper to taste

- Optional: Whole wheat bread, pita bread or tortillas, or greens for a salad base.

Instructions:

1. In a medium bowl, combine the shredded chicken, sliced avocado, chopped celery, red onion, and cilantro.

2. Drizzle with olive oil and lime juice, and season with salt and pepper to taste.

3. Toss well to combine all ingredients.

4. Serve the chicken and avocado salad on your choice of bread, pita bread or tortillas. Alternatively, you can turn it into a salad and serve with greens.

Tips:

- For added flavor, you can grill or pan-fry the chicken instead of boiling or steaming it.

- If you don't have cilantro on hand, you can substitute with parsley or basil.

- You can add additional chopped vegetables like tomatoes, cucumbers, or carrots for extra crunch.

- To make the salad ahead of time, prepare the chicken and avocado mixture and store in an airtight container in the fridge. Chop and add the fresh vegetables just before serving.
