What are the 5 mother sauce?

The five mother sauces are:

1. Béchamel - a white sauce made with milk, butter, and flour.

2. Velouté - a white sauce made with chicken or fish stock, roux and cream

3. Espagnole - a brown sauce made with beef stock, tomato paste, roux

4. Hollandaise - an emulsion sauce made with egg yolks, melted butter, lemon juice, and salt.

5. Tomato - made with fresh tomatoes, mirepoix, aromatics, tomato concetrate, roux.
