What is the recipe for tamarind juice?

Ingredients

- 1 cup dried tamarind

- 1 quart water

- 1 cup sugar

- 1½ teaspoon salt

- Optional: 1-inch piece of ginger, peeled and sliced

Instructions

1. Rinse the tamarind in cold water to remove any dirt or debris. Break it into small pieces.

2. Place the tamarind in a large pot or slow cooker and add the water. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the tamarind is softened and the water is infused with its flavor.

3. Strain the liquid into a large bowl, pressing down on the solids to extract as much juice as possible. Discard the solids.

4. Add the sugar, salt, and ginger (if using) to the tamarind juice. Stir until the sugar is dissolved.

5. Taste the juice and adjust the sweetness or saltiness to your liking.

6. Chill the juice for at least an hour before serving. Serve over ice, or mix with sparkling water for a refreshing tamarind soda.

Tips:

- To make a more concentrated tamarind juice, reduce the amount of water to 3 cups.

- If you don't have fresh ginger, you can use ½ teaspoon of ground ginger.
