How long has gelatin been around?

The first records of people using gelatin come from the 15th century when cookbooks featured "gelly" recipes made with dried animal bladders. The use of gelatin expanded greatly in the 19th century, with the advent of industrial processing and the discovery that ossein (the protein in bones) could be transformed into it via a chemical reaction with acids or alkalis.
