Simple Lentil Soup Recipe

This is a basic recipe for lentil soup that you can easily adapt to your own taste.

Ingredients:

* 1 cup brown or green lentils, rinsed

* 4 cups vegetable broth (or water)

* 1 onion, chopped

* 2 carrots, chopped

* 2 celery stalks, chopped

* 1 teaspoon dried thyme

* 1/2 teaspoon salt

* 1/4 teaspoon black pepper

* Optional: 1/2 cup chopped fresh parsley

Instructions:

1. Sauté vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery and sauté for 5 minutes, until softened.

2. Add lentils and broth: Stir in lentils, broth (or water), thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.

Tips:
