Cassava Bibingka
Ingredients:
* 1 cup grated cassava
* 1 cup grated young coconut
* 1/2 cup sugar
* 1/2 cup all-purpose flour
* 1/4 cup melted butter
* 1/4 cup evaporated milk
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the cassava, young coconut, sugar, flour, melted butter, evaporated milk, eggs, vanilla extract, baking powder, and salt. Mix well until all ingredients are combined.
3. Pour the mixture into a greased 9-inch round baking pan.
4. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
5. Let cool for a few minutes before slicing and serving.
