Can you peel potatoes 24hrs ahead?
It is not advisable to peel potatoes 24 hours ahead as they will start to oxidise and turn brown. This is due to the presence of enzymes called polyphenol oxidases, which react with the oxygen in the air to cause discolouration. To prevent this, it is best to peel potatoes just before cooking or store them in water with a little lemon juice or vinegar added to help slow down the oxidation process.
