What do people make cheese from?

Cheese is made from the milk of mammals, most commonly cow's milk, but also from the milk of sheep, goats, buffaloes, and even camels!

Here's how it works:

1. Milk is collected from the animals.

2. Bacteria (culture) is added to the milk. This bacteria converts lactose (milk sugar) into lactic acid, which gives cheese its tangy flavor and causes the milk to curdle.

3. Rennet (an enzyme) is added, which separates the milk into curds and whey.

4. The curds are cut and stirred to remove excess whey.

5. The curds are then pressed to remove more whey and form a solid mass.

6. The cheese is aged for a period of time, during which it develops its flavor and texture.

The type of milk, bacteria, and aging process all contribute to the unique flavor and texture of different cheeses.
