The gas in Swiss cheese is called carbon dioxide.

It's produced by bacteria called Propionibacterium freudenreichii during the cheesemaking process. These bacteria break down lactic acid, which is a byproduct of the initial fermentation process, and release carbon dioxide as a waste product. The carbon dioxide gets trapped within the cheese, creating the characteristic holes or eyes.
