What causes cheese to eat Swiss chesse?

This is a bit of a trick question! Cheese doesn't "eat" Swiss cheese.

The holes in Swiss cheese, called "eyes," are actually caused by carbon dioxide gas. This gas is produced by bacteria called propionibacterium, which are added to the cheese during the making process. These bacteria feed on the lactose (milk sugar) in the cheese and release the gas.
