Is there a pizza recipe with feta cheese?

Ingredients:

- For the dough

- 1 teaspoon sugar

- 2 1/4 tsp active dry yeast

- 1 cup warm water (105-115 degrees F)

- 2 tablespoon extra virgin olive oil, plus more for drizzling

- 2 ½ tsp salt

- 3 ½ cups all purpose flour

- For the topping

- Tomato sauce

- Feta cheese

- Diced tomatoes

- Chopped fresh basil

- Extra grated parmesan or mozzarella (optional)

Instructions:

1. In the bowl of a stand mixer, combine the sugar and yeast. Add in warm water and let stand for 5-10 minutes until the yeast starts foaming.

2. Add in olive oil, salt and 2 ½ cups of the flour. Using the dough hook attachment, mix on medium speed until the dough just comes together. This should take about 2-3 minutes. At this point, the dough will be very soft and sticky. Add in more flour, ¼ cup at a time until a smooth, elastic dough is formed. The dough should clear the sides of the bowl and should bounce back when you poke it with a finger.

3. Lightly oil a large bowl and transfer the dough to the bowl. Cover the dough with plastic wrap or a damp towel and let rise in a warm place until doubled in size, about 1-1 ½ hours.

4. Preheat the oven to 450 degrees F. Divide the dough in half for 2 individual pizza crust or shape into a 12-14 round depending on the size of your pizza pan. Place the dough on a lightly floured pizza pan or baking sheet and let rest for 10-15 minutes while the oven preheats.

5. Drizzle the dough with olive oil to the edges of the crust. This helps the cornmeal or rice flour (if used) to stick.

6. Evenly spread a layer of tomato sauce on the dough, leaving about an inch clear around the border of the crust. Sprinkle torn pieces of feta cheese and top with diced tomatoes. (If using the extra parmesan or mozzarella, sprinkle it on top)

7. Bake for about 10-15 minutes or until the crust is golden brown and the cheese has melted. Garnish with chopped basil and serve.
