What is nob cheese?
Nob cheese or Nobbies is a dairy product in the form a soft cheese made in Lancashire in the north-west of England, and dates from at least the 16th century. Nob cheese is made from pasteurised milk, traditionally sheep milk but now more usually cows' milk. It has a fat content of around 45%. The cheese is white in colour and has a sweet, creamy taste. It is matured for a short time, usually between two and three weeks.
The cheese was traditionally wrapped in nettle leaves, which gave it a distinctive flavour. However, this practice has now been discontinued due to concerns about the risk of contamination from the leaves. Nob cheese is now usually wrapped in plastic or foil.
