What kind of food did the buffalo soldiers have to eat?
Buffalo soldiers were given the same rations as other U.S. soldiers. Their diet consisted primarily of salted beef or pork accompanied by hardtack (hard, dry biscuits), beans, rice, and coffee. Fresh fruits and vegetables were scarce and often spoiled quickly in the harsh conditions. On occasion, buffalo soldiers would hunt and forage for wild game and plants to supplement their rations.
