What is brandavino?

Brandavino is a Provencal Provencal or Niçois dish prepared by whipping salt cod, olive oil, crushed garlic and sometimes cream or milk, and then served on croûtons.

Cod has been prepared this way for centuries. One of the earliest recipes appears in the 17th century cookbook _Le cuisinier françois_ by La Varenne. The dish is also mentioned in the 19th century by Honoré de Balzac, Alexandre Dumas, and Émile Zola.

Brandavino is traditionally made with salt cod, but today one might also use salt cod in combination with other fish like red mullet or monkfish. While croûtons are the most common way to serve brandavino, it is sometimes used as a sandwich spread.
