Hash brown casserole to feed 100 people
Ingredients:
- 10 pounds potatoes, peeled and cubed
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped green bell pepper
- 1 (10.75 ounce) can cream of mushroom soup
- 1 (10.75 ounce) can cream of celery soup
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley leaves
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. In a large bowl, combine the cubed potatoes, melted butter, onion, celery, and green bell pepper.
3. In a separate bowl, whisk together the cream of mushroom soup, cream of celery soup, sour cream, milk, Parmesan cheese, parsley, salt, and pepper.
4. Add the wet ingredients to the dry ingredients and mix well to combine.
5. Pour the casserole mixture into a greased 9x13 inch baking dish.
6. Bake for 45 minutes, or until the potatoes are tender and the casserole is bubbly.
7. Let cool for 5 minutes before serving.
