How to Prepare Pudina Chutney (5 Steps)

Pudina chutney, or mint chutney, is a common condiment for Indian dishes. Chutneys are made of strongly flavored fresh ingredients and are served alongside Indian meals. They are used in small portions to provide a bite of flavor to the curried and creamed dishes that make up Indian cuisine. Things You'll Need

  • 2 cups fresh whole mint leaves 2 cups fresh cilantro 2 to 3 green chilies, to taste 1 tsp. tamarind paste 1 tbsp. raw cane sugar 1 inch piece of fresh ginger 1 clove garlic, peeled salt to taste 2 tbsp. lemon or lime juice food processor or blender

Make the Chutney

  1. Wash the mint, cilantro and chilies thoroughly. Pat them completely dry with a paper towel.

  2. Place a handful of the mint leaves in the food processor and puree.

  3. Add the remaining ingredients slowly to the food processor. Add a small amount at a time, then puree them together. Repeat this until all the ingredients are incorporated.

  4. Add 2 to 3 tbsp. of water if needed, until the mixture is uniformly creamy and bright green.

  5. Store for up to two weeks in the refrigerator.
