How to Cook Eggrolls Without a Deep Fryer (10 Steps)

The exact origins of the succulent cylinders of delicately crisp dough and flavorful fillings known as egg rolls cannot be pinned down, but it is likely that they were created in the late 1930s by Chinese immigrants seeking to please the notoriously provincial American palate. As with all great dishes, egg rolls adapt to changing times. While deep frying imparts textural joys of its own, pan frying and baking will also result in crunchy, golden treats with the bonus of fewer added calories and fat.

Things You'll Need

  • Egg roll wrappers
  • Filling
  • Small bowl of water
  • Skillet
  • Oil
  • Tongs
  • Paper towels
  • Baking sheet
  • Nonstick cooking spray

Artful Assembling

  1. Prepare your filling. This can be anything you like from traditional Asian fillings of minced vegetables and cooked seafood or meat to less traditional pizza toppings, sandwich fillings or even dessert ingredients. Add seasonings such as ginger or 5-spice mix and moisten it very slightly with rice wine vinegar and a touch of sesame oil. Mix thoroughly.

  2. Place one egg roll wrapper on your work surface so that one point of the square is pointing right at you. Leave the rest of the wrappers under a dampened dish towel so that they don’t dry out.

  3. Place a small spoonful of filling in a horizontal line just below the far point of the wrapper. Make the line as even as possible and leave plenty of room at both sides.

  4. Fold the top point down over the filling. Wet your fingers in the bowl of water and fold the two side points in to the center, gently sealing them with your wet fingertips. Roll the filled wrapper toward yourself, keeping it tight so that no air bubbles form. Seal the final point with wet fingertips and place the wrapper seam down on a plate. Repeat until all of the egg rolls are assembled.

Scrumptious Skillet Frying

  1. Fill the bottom of a heavy skillet with about 1 inch of oil. Canola or vegetable oil work best for this. Heat the oil until the surface begins to look shimmery, which will be at about 325 degrees Fahrenheit to 350 F.

  2. Place a few egg rolls carefully into the hot oil. Do not crowd the pan or the egg roll wrappers will nit get deliciously crisp. Cook the eggrolls for 2 to 3 minutes per side, turning them carefully with tongs. Handle them gently so that the tongs do not squish or tear the wrappers.

  3. Remove the egg rolls from the hot oil and set them n a plate which is lined with at least two paper towels so that the excess oil can drain. Continue until all of the egg rolls are cooked.

Beautiful Baking

  1. Preheat your oven to 375 F. Spray a baking sheet lightly with nonstick cooking spray or wipe it down with a paper towel dampened with oil.

  2. Place your egg rolls onto the oiled baking sheet in a single layer, making sure to leave a bit of space between them for hot air to circulate.

  3. Bake the egg rolls for 15 minutes or so, until the tops begin to turn brown. Turn all of the egg rolls carefully and continue baking them for another 15 minutes or until the wrappers are crisp and golden and the filling is hot throughout.
