What is mid-palate tastes in wine?

Mid-Palate Flavors

The mid-palate refers to the sense of texture, weight and flavor that a wine displays once it has settled on the tongue, but before it is swallowed. It is here that tannins and acidity will make themselves known. Wines with significant oak influence will often show wood characteristics like spice or vanilla here as well. Flavors tend to be more savory than the more fruity aromas experienced on the nose, and include such things as:

* Herbs: Basil, mint, rosemary, sage, thyme

* Spices: Almond, cinnamon, clove, nutmeg, pepper

* Vegetables: Asparagus, broccoli, bell pepper, fennel, pea

* Minerals: Flint, graphite, gunpowder, slate, wet stone

* Fruit: Fig, plum, raisin, cherry, red currant

* Wood: Cedar, oak, vanilla
