- Slowly pour the infused alcohol through the strainer into the clean jar.
- Discard the strained ingredients.
5. Diluting with Simple Syrup:
- Bitters are traditionally made with a concentration of 45% ABV (90 proof).
- To achieve this, mix the infused alcohol with simple syrup at a ratio of 2 parts alcohol to 1 part simple syrup.
- Simple syrup is made by dissolving equal parts (e.g., 1:1) of granulated sugar in water and bringing the mixture to a boil until the sugar dissolves.
6. Final Filtration:
- After adding the simple syrup, shake the bitters vigorously to ensure a uniform mixture.
- Strain the bitters once again through a fine mesh strainer lined with cheesecloth to remove any remaining sediment.
7. Bottling and Labeling:
- Transfer the filtered bitters into clean bottles.

8. Aging:
