How to Cook Beef With Pineapple Juice in a Slow Cooker

Pineapple and beef are natural partners in Asian and Hawaiian style dishes, such as stir fries. But if you don't have time to get out the wok, why not cook up a pineapple beef slow cooker meal? Pineapple juice gives your meat a sweetly tangy flavor that goes with just about any side dish. Make a beef dish with a teriyaki style flair or create a tangy, fruit-infused barbecue style corned beef or brisket. This is a main dish that can be assembled in the morning and will reward you at dinner time with a trouble-free meal.

Preparing the Beef

  • If you are using beef chunks, prepare them by trimming away any excess fat or tendons and set aside. If you are using brisket or corned beef, you may want to use a rub on it before cooking. Prepare a rub by combining spices and herbs in a bowl. You may use a combination of salt, pepper, onion or garlic powder. You may also use a mixed-spice seasoning of brown sugar, mustard and chili powder. Mix well and then rub into your brisket.

Assembling Ingredients

  • Place the beef chunks, corned beef or brisket in the slow cooker. Make a sauce to add to the beef by combining pineapple juice with apple cider vinegar, Worcestershire sauce, brown sugar, soy sauce and garlic; simply use the pineapple chunks and their juice; or use a commercial teriyaki sauce. Use enough liquid to cover the meat. Chop vegetables such as carrots, onions, celery and green peppers, and add these to the beef and sauce.

Cooking the Beef

  • Cover your slow cooker and plug it in. The beef needs to cook at about 300 degrees F, so depending on your cooker, you may need to set it on low or on a higher setting. Halfway through the cooking process, you may thicken the sauce with a bit of cornstarch or flour mixed into a small amount of the hot liquid; mix the cornstarch and a few tablespoons of sauce well in a small dish, then add to the slow cooker and stir thoroughly to combine. Cook the pineapple beef for about 8 hours, or until tender and thoroughly cooked.

Serving the Beef

  • Serve your Hawaiian- or Asian-style pineapple beef with steamed rice and additional stir-fried vegetables. The beef brisket or corned beef can be served sliced or shredded, with mashed or boiled potatoes or some crusty French bread and butter and a green salad. Make sandwiches with the leftover corned beef or brisket.
