If you cook orange roughy in a slow cooker you can walk away and leave it -- for a few minutes, anyway. Orange roughy cooks quickly, even in a slow cooker, so don't expect it to be an all-day affair. At the most, you'll need one hour to cook the fish using this method.

On the stove top, orange roughy cooks in under 10 minutes. In the slow cooker, cook it on high heat for 45 minutes to 1 hour. To determine doneness, pierce the middle of the fish with a fork. The flesh should be firm, opaque and flaky, but still slightly moist. Do not overcook it, which will dry out the fish out.
