How to Cook Stripers (4 Steps)

Striper bass, whether the saltwater or freshwater species, are a firm, succulent fish that can be prepared with excellent results on a grill, stuffed with seafood and veggies and baked, or steamed in a bamboo steamer Asian-style with fresh ginger and soy sauce. A good-sized striper (3 to 4 lbs.) can easily feed four people, so if you have a good catch, be ready to clean and freeze this delicious fish or invite over a few more friends for supper.

  • Fresh stripers, either whole or sliced into thick fillets 1 quart of fish broth for steaming stripers A well-stocked spice rack Whole garlic cloves and garlic press Soy sauce Vegetables, depending on preference Sesame and olive oil Butter Fresh lemons Fresh dill Fresh ginger Food grater Outdoor grill Bamboo steamer Basic cooking utensils Aluminum foil

Instructions

  1. Clean and rinse the whole striper or fillets and pat dry with paper towels.

  2. Grill the striper outdoors by placing fillets directly over hot coals for about five minutes per inch of thickness on each side, flipping only once. Baste frequently with a mixture of oil, butter, lemon juice and fresh minced dill. Grill a whole fish wrapped in aluminum foil with lemons, fresh dill and pads of butter.

  3. Bake a whole striper after stuffing the cavity with a mix of seafood, vegetables and fish broth, such as mushroom caps, oysters and (peeled) shrimp, snow peas and broth flavored with fresh herbs. Bake the fish at 350 F for 10 minutes per inch of thickness.

  4. Steam a whole striper or fillets in a bamboo steamer after basting with a light coat of sesame oil and sprinking freshly grated ginger over the fish. Drizzle with soy sauce and finish seasoning with fresh, minced garlic, salt, pepper, minced green onions and 1 tbsp. of lemon zest. Steam over fish broth for about 10 minutes until the fish flakes easily with a fork.
