How to BBQ Tuna (5 Steps)

Tuna steak, fresh off the barbecue, makes for a delicious and nutritious topping for salads, pastas and other dishes, as well as a standalone entree. Although official food safety guidelines call for cooking fish to 145 degrees Fahrenheit at the center, many people prefer tuna rare or medium-rare, as it is lean and quickly dries out. However you choose to prepare them, grilling tuna steaks is a simple procedure that takes only minutes. The trickiest part is probably just deciding how to marinate or season this versatile dish.

  • Nonreactive dish
  • Acidic liquid
  • Cooking oil
  • Complementary ingredients
  • Grill scraper
  • Nonstick spray
  • Paper towels
  • Salt and pepper
  • Spatula or tongs

Instructions

  1. Combine equal parts acidic liquid, such as citrus juice, soy sauce or red wine and cooking oil in a nonreactive dish. Add salt, pepper, mustard, citrus zest, garlic, ginger, scallions, dill, thyme, coriander, allspice or other any desired complementary ingredients. Marinate the tuna steaks in the mixture in the refrigerator for about 30 minutes.

  2. Scrape your grill clean and coat it with nonstick spray. Preheat the barbecue to moderate-high heat.

  3. Take the tuna steaks out of the marinade, allowing the excess to run off. Dump out the marinade, as it has been contaminated by the uncooked seafood. Blot the tuna steaks dry with paper towels and season them with salt, pepper and any other herbs or spices used in your marinade.

  4. Place the tuna steaks directly over the heat on the barbecue, presentation-side down. Sear them for about 2 minutes for rare, 3 minutes for medium-rare or 4 minutes for medium. Turn them with a spatula or tongs and grill the second side for the same amount of time.

  5. Take the tuna off the barbecue promptly to prevent overcooking. Top the steaks with fresh herbs, sauce, salsa, chutney or other preparation you're using.
