What country does chicken kiev originate from?

Chicken Kiev does not originate from Kyiv, nor is it a part of Ukrainian cuisine. In fact, the dish's origins are still a mystery. However, most historians agree that chicken kiev originated in France in the early 19th century. The dish was likely invented by French chef Nicolas Appert, who first published a recipe for chicken kiev in his 1810 cookbook, "The Art of Preserving Animal and Vegetable Substances." In his recipe, Appert called the dish "côtelettes de volaille à la Kiev" (chicken cutlets, Kiev-style).
