How to Remove Skin From a Drumstick (4 Steps)

Crisp, roasted chicken skin is a treat. However, people on a low fat diet are often advised to remove the skin from chicken before cooking since that is where most of the fat and calories reside. While the skin keeps the chicken moist while cooking it does release fat into the meat. Removing the skin doesn't take any special equipment other than a cutting board and knife. The skin can be removed from chicken drumsticks with only a tug or two, while turkey drumsticks take a bit more effort.

Instructions

  1. Place the drumstick on a cutting board so it is parallel with the board. Hold it firmly in place with your nondominant hand.

  2. Cut the skin around the bone at the narrow end of the drumstick with a knife held in your nondominant hand. Roll the drumstick as you cut so the skin is completely detached from the flesh at the narrow end of the drumstick right above where the foot would have been attached.

  3. Pick up the chicken drumstick with your nondominant hand. Place the index finger of your dominant hand under the skin at the top of the drumstick. Pinch the skin between that index finger and your thumb. Pull down on the skin toward the narrow end of the drumstick. The skin should slide off.

  4. Pick up the turkey drumstick with your nondominant hand. Firmly grab the skin with the index finger and thumb of your dominant hand. Pull the skin a few inches down toward the narrow end of the drumstick. Give the drumstick a quarter turn. Grab the skin and pull it down. Continue turning the drumstick and pulling down the skin. It should slide off where you've cut the skin at the end.
