Really Simple Pasta and Bean Salad:
This recipe is as straightforward as it gets, with only a few ingredients and minimal effort.
Ingredients:
* 12 ounces pasta (any shape you like, but rotini or penne are good choices)
* 1 (15 ounce) can black beans, rinsed and drained
* 1 (15 ounce) can kidney beans, rinsed and drained
* 1/2 cup chopped red onion
* 1/4 cup chopped fresh parsley
* 1/4 cup olive oil
* 2 tablespoons red wine vinegar
* Salt and pepper to taste
Instructions:
1. Cook pasta according to package directions. Drain and rinse with cold water.
2. In a large bowl, combine cooked pasta, black beans, kidney beans, red onion, and parsley.
3. Whisk together olive oil and red wine vinegar in a small bowl. Pour dressing over pasta mixture and toss to coat.
4. Season with salt and pepper to taste.
