How to Make Lasagna With Feta
Traditionally made of ewe’s or goat’s milk, feta cheese is the king ingredient of Greek salad. With its bright white color, briny taste and brittle texture, it adds a tangy yet creamy note to lasagna recipes. Feta can be crumbled among pasta layers, melted into the sauce or spread in chunks on top of the dish to be baked in the oven.
Spinach Essentials

Spinach and feta cheese are a winning combination. Let the traditional Greek specialty spanakopita, a spinach and feta pie baked in phyllo sheets, inspire you to create a lasagna version of the dish. Combine lightly fried red onions and celery with crumbled feta and a softer fresh cheese, such as anthotiro or ricotta. Add beaten eggs and olive oil and season with dill and nutmeg. Layer this filling between precooked lasagna sheets. Finish with a simple béchamel sauce and grated cheese on top, and bake.

Classic Greek flavors like feta cheese, olives and Mediterranean herbs and vegetables work well together, and not only in salads. Sauté onion, garlic and oregano in a skillet and add seasonal vegetables and tomato pulp to make a sauce. Stir feta cheese into ground beef and tomatoes for a tangy, creamy twist on classic Bolognese sauce, or use minced chicken and tomatoes in combination with chopped Swiss chard and feta. Lasagna filled with cooked chicken breast slices and vegetables, or with ground lamb flavored with rosemary, can be ladled with marinara sauce and finished with large chunks of feta on top. For a quick fix, enrich a jar of Alfredo sauce with feta and mix with chopped cooked chicken to fill your lasagna. Make seafood lasagna with crabmeat and shrimp, as well as feta and cottage cheese, enhanced by a white sauce flavored with shrimp stock.
