Ingredients:

* 1 3/4 cups white sugar

* 1 cup water

* 2 1/2 teaspoons vanilla

* 1/4 teaspoon salt

* 5 cups all-purpose flour

* 2 teaspoons baking powder

* 1/2 teaspoon baking soda

* 1/2 cup shortening

* 2 eggs

* 1 3/4 cup slivered almonds

* 1/4 cup dried cherries

Instructions:

1. In a medium saucepan, combine the sugar, water, vanilla, and salt. Bring to a boil and stir until the sugar is dissolved. Remove from heat and let cool.

2. In a large bowl, whisk together the flour, baking powder, and baking soda.

3. In another bowl, beat together the shortening, eggs, and cooled sugar syrup until smooth.

4. Add the wet ingredients to the dry ingredients and mix until well combined. Stir in the almonds and cherries.

5. Turn the dough out onto a lightly floured surface and knead until it comes together. Divide the dough in half.

6. Roll each half of the dough into a 12-inch rope. Place the ropes on a lightly greased baking sheet and bake at 350°F for 25-30 minutes, or until the biscotti are golden brown and firm.

7. Remove from oven and let cool completely.

8. Reduce oven temperature to 200°F.
