For medium-rare, about 2 1/2 to 3 hours for a 10 to 12-pound roast.
For medium, about 3 to 3 1/2 hours.
For medium-well, about 3 1/2 to 4 hours.
For well-done, about 4 to 4 1/2 hours.
Remember to let the meat rest before slicing. For best results, allow it to rest for 20 minutes before slicing and serving. This allows the juices to evenly redistribute throughout the meat, resulting in perfectly tender and succulent prime rib.
