Seasoning Pork Shoulder With Coffee

The rich taste of fresh coffee goes unexpectedly well with the mild and savory flavor of pork. One of the best ways to season a pork shoulder is with a rub, which is a dried blend of spices that you massage into the meat before cooking it. Coffee, whether instant or ground, works well as a rub especially when lightened by the sweetness of brown sugar.

Things You'll Need

  • Paper towels
  • Salt
  • Pepper
  • Ground coffee, instant coffee or espresso powder
  • Brown sugar
  • Chili powder
  • Olive oil, optional

Instructions

  1. Rinse your pork shoulder in cool water and pat it dry with paper towels. Throw the paper towels into the trash immediately to avoid contaminating your counter.

  2. Season the outside of the pork shoulder with salt and pepper. Any kind will do, though coarse salt and freshly ground mixed peppercorns give a little extra flavor.

  3. Mix together ground coffee, instant coffee or espresso powder, brown sugar and chili powder to taste. If you prefer a paste rub, also add olive oil.

  4. Massage the coffee and seasoning mix into the outside of the pork shoulder, covering it completely.

  5. Cover the roast with aluminum foil or cling wrap and let it sit in the refrigerator for at least two hours or overnight before proceeding with your recipe.
