How to Cook Goat Steak (5 Steps)

Chowing down on goat meat may seem like an exotic idea, but goat is widely consumed around the world, a fixture in Mexican, Indian and Greek cuisine. Described as possessing a flavor akin to lamb but punctuated with an earthier aroma, goat is available in cuts similar to those for lamb, including loin chops. Since goat meat is very lean, it is often stewed or braised to retain its juiciness, but if you’ve got a hankering for steak, goat chops can be pan-seared and roasted and retain its juicy qualities.

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Melt a pat of butter in an oven-safe skillet over medium heat. Season the goat chops by sprinkling each side with a few pinches of salt and pepper, to taste.

  3. Add the goat chops to the hot skillet and sear for a minute or two on each side. Remove the skillet from the stove top and insert it into the oven.

  4. Roast the goat chops until the desired doneness is achieved. Insert a meat thermometer into the center of the chop for an accurate measurement. An internal temperature of around 140 F, which is a medium-rare doneness, works well for leaner meats such as goat; however, the U.S. Department of Agriculture and Food Safety recommends cooking goat to an internal temperature of 145 F to destroy any bacteria that may be present in the meat.

  5. Remove the goat chops from the oven and serve with a white wine sauce.
