How to Fry Yellow Snapper (7 Steps)
Yellow snapper is a popular game and table fish caught year-round from Florida to Brazil. A swift swimming fish recognizable by its lateral yellow strip running from head to tail, it is considered by many the most delicious fish among the snapper family. The fish has a mild sweet flavor and tender lean meat that can easily be overpowered by too much seasoning when cooking. As a result, yellow snapper is generally cooked very simply to maintain its natural delicious flavor. Yellow snapper fries quickly, with little trouble and works equally well for a impressive entree or a tasty fish sandwich.

- Running water
- Flour
- Light olive oil
- Heavy skillet
- Stove burner
- Spatula

Cut the fish fillets into 3-inch lengths and thoroughly wash under cold running water.

Combine all-purpose flour with salt and pepper to taste. Add additional seasonings if desired, bearing in mind the mild delicate flavor of the yellow snapper.

Place 1 to 2 tbsp. of light olive oil in a large heavy skillet.

Turn on the stove burner to medium high and heat the oil until it is very hot. A single drop of water should pop and sizzle when it falls into the hot oil.

Dredge the cut portions of the yellow snapper fillet through the flour and seasoning mixture in order to coat all surfaces completely. Shake of the excess flour and gently lay the fillets into the hot oil.

Fry the fillets for approximately three to four minutes per side turning them very carefully only once. The fish is done when it flakes and separates when a spatula is dragged across the surface.

Remove the fillets from the skillet when done, and lay them on a paper towel to drain and serve immediately.
