How to Cook Fish Asian Style in an Oven

Much of Asian cooking eschews the use of the oven, even when cooking a large item such as whole fish. Instead, fish are steamed or grilled over an open fire. But you can still use your home oven to cook fish in an Asian-inspired style. Much like meat on the bone, fish cooked on the bone is simply more flavorful. Oven-roast whole fish with ingredients such as scallions, ginger and soy sauce for a satisfying and easy main dish.

Things You'll Need

  • Whole firm-fleshed fish, cleaned and scaled
  • Scallions
  • Ginger
  • Soy sauce
  • Sesame oil
  • Neutral-flavored cooking oil, such as peanut or canola oil
  • Salt
  • Pepper
  • Jelly roll pan
  • Aluminum foil

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Combine in a small bowl soy sauce, cooking oil, sliced scallions, grated ginger and sesame oil. Set aside.

  3. Salt and pepper both the interior and exterior of the fish.

  4. Line a baking sheet with aluminum foil.

  5. Place the fish on the foil and pour the contents of the bowl over it.

  6. Cover the fish loosely with a second layer of aluminum foil.

  7. Bake for 30 minutes. Check the fish. If the flesh pulls away from the skin and flakes easily off the bone, it's done. If not, return it to the oven. Use a meat thermometer to double-check doneness; the internal temperature of whole fish should reach 145 degrees Fahrenheit for food safety reasons.

  8. Remove the fish from the oven and let it rest five minutes before serving.
