How to Open an Ostrich Egg

An ostrich egg may taste similar to a chicken egg, but the act of getting inside the ostrich egg is much more complicated--usually a two-person job. The thick protective shell on the outside of an ostrich egg, meant to protect the egg when the heavy ostrich mother sits on it for incubation, is also what makes it difficult to break the surface. All the hard work, however, is worth it. An ostrich egg contains enough yolk to substitute for as many as two dozen chicken eggs and contains much higher levels of healthy polyunsaturated fatty acids.

Things You'll Need

  • Chisel
  • Light hammer
  • Large bowl

Instructions

  1. Place the ostrich egg on a counter, table or other sturdy surface. Place the wider end of the ostrich egg down toward the counter. Have another person hold the egg in place.

  2. Place the chisel on the top of the ostrich egg, and lightly tap the chisel with a hammer. Continue tapping until the chisel breaks the surface of the egg. Clear away as many shell pieces as possible. Tap the surface of the egg near the opening with the hammer until the hole is at least the size of a quarter.

  3. Hold the egg over a large bowl and let the yolk drip out until the egg is empty.
