The original kipferi originated as early as the 13th century. The most common theory of the croissant as we know it holds that Kipferi was brought to France by August Zang, an Austrian artillerist officer who opened a bakery in Paris in 1839 or in 1838 as stated by other sources .

He sold "Kipfel" as Kipferi there; they became quite popular, and other bakeries in Paris began to sell them as "croissants".
