How to Make...Creme Brulee?

Crème Brûlée

Ingredients:

* 1 cup heavy cream

* 1/2 cup milk

* 1/4 cup granulated sugar

* 1/2 teaspoon vanilla extract

* 4 egg yolks

* 1 tablespoon brown sugar

Instructions:

1. Preheat oven to 325 degrees F (165 degrees C).

2. In a medium saucepan, combine the heavy cream, milk, and granulated sugar. Bring to a simmer over medium heat, stirring occasionally.

3. Remove from heat and stir in the vanilla extract.

4. In a bowl, whisk together the egg yolks. Slowly whisk in the hot cream mixture.

5. Pour the custard into 6 ramekins or custard cups. Place the ramekins in a baking dish filled with about 1 inch of hot water.

6. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly.

7. Remove from oven and let cool for a few minutes.

8. Sprinkle the tops of the custards with brown sugar.

9. Using a kitchen torch, carefully caramelize the brown sugar until it is melted and bubbling.

10. Let cool for a few minutes before serving.
