How do you make jambalaya in the crockpot?
## Ingredients
* 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
* 1 pound smoked sausage, sliced
* 1 pound shrimp, peeled and deveined
* 1 cup chopped onion
* 1 cup chopped green bell pepper
* 1 cup chopped celery
* 2 cloves garlic, minced
* 1 (28 ounce) can diced tomatoes
* 1 (14.5 ounce) can black beans, rinsed and drained
* 1 (14.5 ounce) can corn, drained
* 1 teaspoon dried oregano
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup cooked rice
Instructions
1. In a large skillet, heat some oil over medium heat. Add the chicken and sausage and cook until browned.
2. Add the onion, green bell pepper, and celery to the skillet and cook until softened.
3. Add the garlic, tomatoes, black beans, corn, oregano, thyme, salt, and pepper to the skillet and stir to combine.
4. Bring the mixture to a boil, then reduce heat to low and simmer for 15 minutes.
5. Stir in the shrimp and cook until pink and opaque, about 5 minutes.
6. Add the rice to the crock pot and top with the jambalaya mixture.
7. Cover and cook on low for 4-6 hours, or until the rice is heated through.
Tips
* If you don't have a crock pot, you can make jambalaya on the stovetop. Simply bring the mixture to a boil in a large pot, then reduce heat to low and simmer for 30 minutes, or until the rice is cooked.
* You can also add other vegetables to jambalaya, such as carrots, zucchini, or okra.
* If you want a spicier jambalaya, add some cayenne pepper or hot sauce.
* Serve jambalaya with your favorite toppings, such as sour cream, cheese, or hot sauce.
