Chicken Kiev
Ingredients
- 4 boneless, skinless chicken breasts
- 4 tablespoons butter, softened
- 2 tablespoons minced parsley
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 2 cups panko breadcrumbs
- Salt and pepper to taste
Instructions
1.) Preheat oven to 375 degrees F (190 degrees C)
2.) In a large bowl, combine the butter, parsley, garlic, and Parmesan cheese. Mash with a fork until well combined.
3.) Place a chicken breast between two sheets of plastic wrap. Pound the chicken with a meat mallet until it is about 1/2-inch thick.
4.) Place a heaping tablespoon of the butter mixture in the center of the chicken breast.
5.) Fold the chicken breast in half, enclosing the butter mixture. Press the edges together to seal.
6.) Repeat steps 3-5 with the remaining chicken breasts.
7.) Dredge the chicken breasts in the flour, then the eggs, and finally the panko breadcrumbs.
8.) Place the chicken breasts on a baking sheet lined with parchment paper.
9.) Bake for 20-25 minutes, or until the chicken breasts are cooked through and the breadcrumbs are golden brown.
10.) Serve immediately.
