Baked Chicken Rub (8 Steps)
When chicken is on the menu, you have many preparation options that can turn it into a memorable feast. Whether you prepare a whole chicken, pieces or boneless breasts, chicken has a light flavor that many people enjoy. Enhance the natural flavors of chicken with an herb rub. By working the dry rub into the chicken thoroughly before baking it, you can infuse the meat with the herbs and seasonings.
Things You'll Need
- 2 tbsp. coarse sea salt
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tsp. ground sage
- 1 tsp. paprika
- 1 tsp. tarragon
- Small bowl
- 1 tsp. coarsely ground peppercorns
- 1/2 cup olive oil
- Pastry brush
- Baking pan
- Aluminum foil
- Meat thermometer
Instructions

Mix the salt, onion powder, garlic powder, sage, paprika, tarragon and pepper in the small bowl.

Remove the chicken from its packaging. If the chicken has skin, consider removing it before you apply the rub. Removing the skin makes the chicken lower in fat and allows the rub to penetrate into the meat.

Brush the chicken generously with the olive oil, covering all areas of the chicken evenly.

Sprinkle the rub over the chicken on top of the olive oil. Gently work the ingredients into the meat with your fingers to ensure full contact. Continue sprinkling and working the rub on the chicken until you coat all pieces completely.

Place the chicken into the baking pan and cover the pan lightly with a sheet of aluminum foil.

Bake the chicken in the oven at 350 degrees Fahrenheit until the chicken finishes cooking completely. Roasting a whole chicken should take approximately 1 1/2 hours. Roasting boneless breasts should take about 30 minutes. Roasting bone-in chicken pieces should take about 30 to 50 minutes.

Check the temperature of the chicken with the meat thermometer to determine if it is finished baking. The USDA Food Safety and Inspection Service (FSIS) recommends that you cook chicken to at least 165 degrees Fahrenheit.

Remove the chicken from the oven after it finishes baking.
