Removing the Neck Bone From a Chicken
Typically when purchasing whole chickens from the store, they are packaged with the giblets and neck packed inside the cavity in a tidy little bag. However, if you raise your own chickens for food or buy chickens directly from a farm, removing the neck is a job you may have to take on yourself. Necks are a great ingredient to make a tasty stock, which is the base of a soup. It takes less than 10 minutes to remove the chicken's neck.

- Sharp knife
- Cutting board
Instructions

Place the chicken on a cutting board.

Make a slight incision in the skin on the neck. Roll the neck skin backward, toward the shoulders until you reach the base of its neck.

Cut into the meat at the base of the neck. There are bones in the neck, so rotate the neck as you cut into the meat around it to significantly loosen the neck.

Grab the neck in your hand and and twist a few times until the neck pops off cleanly.
