Chicken Teriyaki Stir Fry
Ingredients:
- Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- Soy sauce
- Brown sugar
- Cornstarch
- Vegetable oil
- Onion, thinly sliced
- Green bell pepper, thinly sliced
- Red bell pepper, thinly sliced
- Broccoli florets
- Snow peas
- Water
Instructions:
1. Combine the chicken, soy sauce, brown sugar, and cornstarch in a bowl. Toss to coat the chicken.
2. Heat the oil in a large skillet or wok over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.

Ingredients:
- Boneless, skinless chicken breasts, cut into 1-inch strips
- All-purpose flour
- Salt
- Pepper
- Olive oil
- Parmesan cheese
- Breadcrumbs
- Egg
Instructions:
1. Preheat oven to 400 degrees Fahrenheit.
2. Combine the flour, salt, and pepper in a shallow dish. Dredge the chicken strips in the flour mixture.
3. Heat the olive oil in a large skillet over medium heat. Add the chicken strips and cook until browned on all sides.
4. Combine the Parmesan cheese and breadcrumbs in a shallow dish. Beat the egg in a separate dish.
5. Dip the chicken strips in the egg, then in the Parmesan cheese and breadcrumb mixture.
6. Place the chicken strips on a baking sheet lined with parchment paper. Spray the chicken strips with cooking spray.
7. Bake in preheated oven for 10-12 minutes, or until the chicken is cooked through.
8. Serve with marinara sauce.
One-Pot Pasta with Sausage and Vegetables
Ingredients:
- Italian sausage, mild or spicy, casings removed
- Onion, chopped
- Green bell pepper, chopped
- Red bell pepper, chopped
- Zucchini, chopped
- Yellow squash, chopped
- Cherry tomatoes
- Uncooked pasta
- Chicken broth
- Italian seasoning
- Salt
- Pepper
- Parmesan cheese, grated
Instructions:
1. Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned on all sides.
2. Add the onion, green bell pepper, red bell pepper, zucchini, yellow squash, and cherry tomatoes to the pot. Cook for 5 minutes, or until the vegetables are softened.
3. Add the uncooked pasta, chicken broth, Italian seasoning, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until the pasta is cooked through.
4. Stir in the Parmesan cheese and serve.
