Savory Cheese and Herb Scones

* 1/2 cup cold unsalted butter, cut into small pieces
* 1 cup buttermilk
* 1 egg, beaten (for brushing)
Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Whisk dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, Parmesan cheese, and herbs.
3. Cut in butter: Using a pastry cutter or your fingers, cut cold butter into the flour mixture until it resembles coarse crumbs.
4. Add buttermilk: Slowly pour in the buttermilk, stirring with a fork until just combined. Do not overmix.
5. Form dough: Turn the dough out onto a lightly floured surface and knead for 5-6 seconds, just until it comes together.
6. Shape and bake: Roll out the dough to about 1/2-inch thickness and use a 2-inch cookie cutter to cut out scones. Place scones on the prepared baking sheet.
